I have mentioned how wow Coconut oil is for you before as it metabolises in your body and doesn't turn to fats in the body. It has so many positive healthy benefits and you can now get more odourless coconut oils which don't taste quite so coconutty, to cook with. Over 90% of its fatty acids are saturated so its very resistant to heat. It can be heated to very high temperatures unlike good old Olive oil. You do still need olive oil and eat it in abundance cold on salads as it is soooo good for you. Heat will damage olive oil (especially Extra Virgin Olive oil), even heating for 10 mins at 160 degrees Centigrade can damage the monounsaturated fatty acids (oleic acid) which is the healthy fats. So try coconut oil to cook with and buy good quality Virgin Olive oil and use it in making cold dishes.
